BEEF STEW WITH VEGETABLES

Ingredients for 4 people
- 500g of beef fillet
- 1 medium leek
- 1 large red pepper, chopped
- 4 spring onions
- 2 medium courgettes
- 250g of datterini tomatoes
- 1 clove of garlic
- 2 tablespoons extra virgin olive oil
- 1 pinch of salt and pepper
- 1 sprig of thyme
Procedure
- For the vegetables
- Attach the Food processor fitted with disc no. 5 to the Kenwood high speed socket and chop the vegetables (courgettes, red pepper, leek and zucchini).
- Cut 500g of meat (beef fillet or sirloin) into cubes then season with a drizzle of oil, salt, pepper and the thyme leaves.
- For cooking
- Pour 2 tablespoons of extra virgin olive oil into the Kenwood steel bowl, set to 100°C, add the previously chopped vegetables and 1 pinch of salt.
- Attach the dough hook with the mixing paddle to its holder and set the speed to 1.
- After 5 minutes add the cherry tomatoes cut in half.
- After 2 minutes add the diced meat, continue cooking for 4-5 minutes.
