Chocolate Salami
Ingredients:
- 100 g of dark chocolate
- 100 g of soft butter
- 60 g of powdered sugar
- 34 g egg yolks
- 15 g of cocoa powder
- 140 g of dry biscuits
- 100g Walnuts / almonds / hazelnuts optional
- Cinnamon
Procedure :
- Chop the dark chocolate and melt it in a double boiler. Let it cool down.
- Work the soft butter together with the icing sugar, add the egg yolks (better if pasteurized)
- Mix them perfectly.
- Finally add the sifted bitter cocoa.
- Add the melted and cooled chocolate. Work a little more to mix.
- Then add the crumbled biscuits and the cinnamon and nuts. Stir with a spatula to distribute them evenly.
- Transfer the mixture obtained on a sheet of parchment paper just sprinkled with icing sugar. With your hands, form a sausage by rolling the paper around it.
- Close the candy ends with string. Transfer it to the refrigerator to harden for at least 2 hours
- Serve by cutting it into slices like a salami
