Chocolate Salami

Ingredients:

  • 100 g of dark chocolate
  • 100 g of soft butter
  • 60 g of powdered sugar
  • 34 g egg yolks
  • 15 g of cocoa powder
  • 140 g of dry biscuits
  • 100g Walnuts / almonds / hazelnuts optional
  • Cinnamon

Procedure :

  1. Chop the dark chocolate and melt it in a double boiler. Let it cool down.
  2. Work the soft butter together with the icing sugar, add the egg yolks (better if pasteurized)
  3. Mix them perfectly.
  4. Finally add the sifted bitter cocoa.
  5. Add the melted and cooled chocolate. Work a little more to mix.
  6. Then add the crumbled biscuits and the cinnamon and nuts. Stir with a spatula to distribute them evenly.
  7. Transfer the mixture obtained on a sheet of parchment paper just sprinkled with icing sugar. With your hands, form a sausage by rolling the paper around it.
  8. Close the candy ends with string. Transfer it to the refrigerator to harden for at least 2 hours
  9. Serve by cutting it into slices like a salami
