A few years ago, this family of salt workers moved from Sicily to San Benedetto del Tronto because it is home to the most thriving blue fish market in the Mediterranean, so as to have the best freshly caught anchovies at hand and to be able to work them immediately at their best.
Anchovies offer a real treasure of taste: they are clear, very fleshy, with an extremely present iodized taste and the right flavor.
By selecting the best batches and respecting the typical Sicilian salting, simple anchovies are transformed into something unique! The maniacal care with which they are put into cans tells us how this family loves their job viscerally.
